Cabot 83 Butter: With a richer, more full-bodied taste, Cabot 83 butter is an unsalted butter with 83% butterfat content, higher than either the U.S. norm of 80% or the European standard of 82%. The higher butterfat content of Cabot 83 translates to lower moisture, resulting in better melting and sautéing characteristics as well as superior performance in stabilizing sauces, clarifying butter and creating delicate desserts. This European-style butter was the top-scoring unsalted butter in the U.S. at 24th Biennial World Championships.
