Chioggia Beets

Chioggia is an Italian coastal town situated on a little island on the north Eastern coast of Italy... It's here that this wonderful beet originated, which is highly sought after for its striking colors. Described as an Italian Heirloom beet with white and purple to pink to red rings of alternating color, they have a sweet peppery flavor and are smooth and mild tasting. Chioggia Beets are beautiful in a salad! Try roasting them and then using them in a salad with crumbled MAINE Feta or goat cheese. They shouldn't bleed if you roast or bake them whole. Remember to slice crosswise to show off the gorgeous rings of color. Use them raw for best color contrast and a sweet bite.
